Lemon Garlic Roasted Potatoes

- ¼ cup grapeseed or olive oil
- 3 lemons, juiced
- 3 limes, juiced
- 6-9 cloves garlic
- ¼ cup vegetable broth
- 1½ tbsp fresh oregano
- 1 tbsp fresh rosemary
- 1 tsp black pepper
- 1 tsp sea salt
- 2 lbs small red potatoes, quartered
Preheat oven to 425 degrees.
Combine all ingredients, except potatoes, into blender or food processor and puree.
In a roasting pan, arrange potato wedges in a single layer, evenly spaced.
Pour the pureed mixture over the potatoes.
Bake for 20 minutes. Flip potatoes and then bake for another 20 minutes or until golden brown with crispy edges.
Serve with any remaining liquid as a sauce.
