Lemon Garlic Roasted Potatoes

  • ¼ cup grapeseed or olive oil
  • 3 lemons, juiced
  • 3 limes, juiced
  • 6-9 cloves garlic
  • ¼ cup vegetable broth
  • tbsp fresh oregano
  • 1 tbsp fresh rosemary
  • 1 tsp black pepper
  • 1 tsp sea salt
  • 2 lbs small red potatoes, quartered


  • Preheat oven to 425 degrees.
  • Combine all ingredients, except potatoes, into blender or food processor and puree.
  • In a roasting pan, arrange potato wedges in a single layer, evenly spaced.
  • Pour the pureed mixture over the potatoes.
  • Bake for 20 minutes. Flip potatoes and then bake for another 20 minutes or until golden brown with crispy edges.
  • Serve with any remaining liquid as a sauce.
